Ingredients:

1 Vidalia onion, sliced

Olive oil, enough to cover bottom of the skillet

Small Yukon gold potatoes, around 1 ½ -2 inches in size

Coarse kosher salt

Fresh ground pepper

Instructions:

1. Heat the cast iron skillet over medium-high heat. Place onions inside skillet and fry for several minutes until browned. Season with salt and pepper. Transfer onions to a bowl.

2. Slice potatoes in quarters. Add enough olive oil to cover the skillet. (Oil should come up 1/8 inches in skillet). Sprinkle a layer of salt into the skillet. Add potatoes to skillet with cut side facing down. Fry about 10-12 minutes without moving or turning potatoes.

3. At about 12 minutes, check if potatoes are properly browned. When potatoes are all seared, cover with a lid and cook about 20 minutes. They will continue to cook through and stay warm until serving.
